Easter is right around the corner, and that means it is time to start thinking about what you will serve at Easter dinner. Ham is a traditional choice at Easter, and that is what we will always make at our house. There are many ham recipes, and maybe this is the year to try something different! Or maybe you want to just stick with a tried-and-true baked ham with a yummy glaze. 

Here are 6 ham recipes for Easter. 

Let’s start with the most popular way to serve ham—baked in an oven with a glaze on top. Here are a few glaze recipes to try. 

Brown Sugar Glaze 

Ingredients: 

  • 1 tablespoon white vinegar
  • 1 cup brown sugar
  • 1/2 teaspoon ground mustard (dry)

**These ingredients are for a 4 to 5 pound ham. Increase ingredients as needed to accommodate for larger ham. 

Directions:

  1. Remove ham from oven about 20 minutes before it is done. 
  2. Pat or brush on glaze. 
  3. Bake ham for about 20 more minutes.

Pineapple Glaze

Ingredients: 

  • 1 cup packed brown sugar
  • 1/4 teaspoon salt
  • 1 tablespoon cornstarch
  • 2 tablespoons lemon juice
  • can crushed pineapple in syrup, undrained
  • 1 tablespoon mustard

Directions:

  1. Mix brown sugar, cornstarch, and salt in a 1-quart saucepan. 
  2. Stir in pineapple, mustard, and lemon juice. 
  3. Cook over medium heat, stirring constantly, until mixture thickens up and boils. Boil and stir for 1 minute.

Ham Loaf

Ingredients:

  • 1 1/2 pounds ground ham
  • 1/2 cup dry bread crumbs
  • 1/2 cup milk
  • 1 small onion, finely chopped (about 1/4 cup)
  • 1/4 cup finely chopped green bell pepper
  • 1/4 teaspoon pepper
  • 1/2 teaspoon ground mustard (dry)
  • 2 large eggs

Directions:

  1. Heat oven to 350 degrees.
  2. Mix all ingredients in a large bowl. 
  3. Spread mixture in an ungreased loaf pan.
  4. Bake uncovered about 1 1/2 hours until thermometer reads 170 degrees. 
  5. Let stand 5 minutes, then remove from pan. 

If you cook like I do (I always overestimate how much I will actually need), chances are likely that you will have some leftovers from your Easter dinner. Ham sandwiches are always yummy, but here are some other recipes that will help you use up some of those leftovers. Or, you can serve one of them as the main meal…why not? 

Ham and Scalloped Potatoes

Ingredients:

  • 6 medium boiled or baked potatoes (about 2 pounds)
  • 1 small onion, finely chopped (about 1/4 cup)
  • 4 tablespoons margarine or butter
  • 1 teaspoon salt
  • 3 tablespoons all-purpose flour
  • 1/4 teaspoon pepper
  • 2 1/2 cups milk
  • 1 1/2 cups cubed full cooked smoked ham

Directions:

  1. Heat oven to 350 degrees. Grease bottom and side of 2-quart casserole with shortening.
  2. Cut potatoes into thin slices. (about 4 cups worth).
  3. Melt 3 tablespoons margarine or butter in 2-quart saucepan over medium heat. 
  4. Cook onion in margarine about 2 minutes, stirring occasionally, until tender. 
  5. Stir in flour, salt, and pepper. 
  6. Cook, stirring constantly, until well mixed and bubbly. Remove from heat.
  7. Stir in milk and heat to boiling, stirring constantly. Boil and stir for 1 minute. 
  8. Stir ham into sauce.
  9. Spread potatoes in casserole and pour sauce over potatoes. 
  10. Chop 1 tablespoon of butter or margarine in small pieces and lay on top throughout. 
  11. Cover and bake for 1 hour or until potatoes are tender. 
  12. Let stand 10 minutes before serving.

Ham and Apple Skillet

Protein, veggies, fruit, and grains all in one meal! This is a ham recipe that your family will love!

Ingredients:

  • 2 tablespoons margarine or butter
  • 1 large apple, coarsely chopped (about 1 1/2 cups)
  • 2 medium carrots, thinly sliced (about 1 cup)
  • 1 small onion, cut into thin wedges
  • 3 tablespoons all-purpose flour
  • 1 cup milk
  • 1 cup apple juice
  • 2 teaspoons ground mustard (dry)
  • 1/4 teaspoon pepper
  • 2 cups cubed fully cooked smoked ham
  • 3 cups cooked rice

Directions:

  1. Melt margarine in 10-inch skillet over medium heat. 
  2. Cook carrots in margarine 2 minutes, stirring occasionally.
  3. Stir in apple and onion and cook about 5 minutes, stirring occasionally, until apples are slightly soft. 
  4. Remove this mixture from skillet. Keep warm.
  5. Mix milk, apple juice, mustard, pepper, and flour in small bowl. 
  6. Stir into skillet and heat until boiling, stirring constantly. 
  7. Boil and stir about 1 minute, until thickened. 
  8. Stir ham and apple mixture into sauce. Cook and stir about 1 minute or until heated through. 
  9. Serve over rice. 

Instant Pot Split-Pea Soup

I use my instant pot for all kinds of things, but I tend to forget it can make great soup, too! This recipe is full of flavor, and maybe your kids will actually like eating their peas this way! This is a great way to use up some of your ham leftovers after Easter dinner.

Ingredients:

  • 1 two-pound ham bone or smoked pork hock
  • 1 rib of celery, chopped
  • 2 tablespoons unsalted butter or olive oil
  • 2 bay leaves
  • 1 medium onion, diced
  • 1 pound green split peas
  • 6 cups unsalted chicken stock
  • 2 carrots, chopped
  • 6 cloves garlic, minced
  • a pinch of dried thyme
  • pinch of salt

Directions: 

  1. Heat up Instant Pot using the saute mode. (Wait until it says HOT). 
  2. Add 2 tablespoons unsalted butter or olive oil, then add in diced onions to prevent the butter burning. 
  3. Season with a pinch of salt. Saute onions until softened (about 2 minutes). 
  4. Add in minced garlic, a pinch of dried thyme, 2 bay leaves, and then saute for another minute. 
  5. Turn pot off and deglaze by pouring 1/2 cup unsalted chicken stock into pot. Use a spoon to scrub brown bits off the bottom. 
  6. Add in chopped carrots and celery. 
  7. Add 1 pound green split peas and 2 pounds ham bone or smoked pork hock. 
  8. Pour in 5 1/2 cups unsalted chicken stock. 
  9. Pressure cook on high for 15 minutes. Let naturally release for 10 minutes. 
  10. Set aside the hock or ham bone. Give the soup a few quick stirs and allow soup to thicken. 
  11. Cut up pieces of ham and add back into soup. 
  12. Season with additional salt if needed.
