Instant Pot Easy Turkey Chili 

Looking for a healthier spin on traditional chili that is still packed full of flavor? Give this recipe a try. 

Ingredients

  • 1 pound turkey meat, ground
  • 5 ounces water
  • 15 ounces cooked chickpeas
  • 1 1/2 teaspoon cumin
  • 1 yellow onion, chopped
  • 3 garlic cloves, chopped
  • 1 yellow bell pepper, chopped
  • 2 1/2 tablespoons chili powder
  • pinch of cayenne pepper
  • 12 ounces vegetable stock
  • salt and pepper to taste

Directions

  1. Add turkey meat to instant pot. Add water, stir well. Seal the instant pot lid and cook on high for five minutes. 
  2. Quick release the pressure and add chickpeas, onion, bell pepper, onion, garlic, chili powder, cumin, salt and pepper, cayenne and vegetable stock. 
  3. Stir all ingredients together. Seal lid and cook on high for an additional five minutes. 
  4. Release the pressure naturally for 10 minutes, then release remaining pressure. 
  5. Stir chili and enjoy!

Instant Pot Honey Barbeque Chicken Wings

Chicken wings have become a staple at Superbowl parties. If you love the sweet and tangy taste of honey barbeque sauce, then you will love this recipe! 

Ingredients

  • 2 pounds chicken wings
  • 1/2 cup water
  • 3/4 cup honey barbeque sauce
  • 1/2 teaspoon basil, dried
  • 1/2 cup apple juice
  • 1 teaspoon red pepper, crushed
  • 2 teaspoons paprika
  • 1/2 cup brown sugar
  • salt and black pepper to taste
  • pinch of cayenne pepper

Directions

  1. Add chicken wings to instant pot.
  2. Add in barbeque sauce, apple juice, red pepper, salt, pepper, basil, paprika, sugar, and water. 
  3. Stir all ingredients, seal instant pot and cook for 10 minutes on high. 
  4. Quick release the pressure and transfer chicken to a baking sheet. 
  5. Add extra sauce from instant pot to top of the chicken wings.
  6. Broil in oven for seven minutes, flip chicken wings over, and broil for an additional seven minutes. 

Instant Pot Kalua Pork

You can serve this delicious smoky pork on its own or as a sandwich. Yum! 

Ingredients

  • 4-pound pork shoulder, cut in half 
  • 1/2 cup water
  • 1 tablespoon liquid smoke
  • 2 tablespoons vegetable oil 
  • salt and black pepper to taste
  • sandwich buns (optional) 

Directions

  1. Set your instant pot to saute mode and add onion. Allow to heat up. 
  2. Add pork, salt and pepper and brown for 3 minutes on each side. Transfer to a plate.
  3. Add liquid smoke and water to the instant pot and stir. 
  4. Place meat back into the instant pot, stir, then cook at high for 90 minutes. 
  5. Release pressure naturally for 15 minutes, then release remaining pressure. 
  6. Move meat to a cutting board and shred. Add some of the remaining sauce on top and serve either on its own or as a sandwich. Enjoy! 

Instant Pot Pork Carnitas

The spices and peppers in carnitas give them an extra punch of flavor. These do involve a little more prep time than some of the other recipes, but it is well worth it! 

Ingredients

  • 3-pound pork shoulder, chopped
  • 2 tablespoons extra virgin olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon oregano
  • 1 yellow onion, chopped
  • 1-pound tomatillos, cut into quarters
  • 1 teaspoon cumin
  • 2 cups chicken stock
  • 1 green bell pepper, chopped
  • salt and pepper to taste
  • 1 jalapeno pepper, chopped
  • 2 bay leaves
  • 1 poblano pepper, chopped
  • Flour tortillas for serving
  • 1 red onion, chopped for serving
  • Shredded cheese for serving

Directions

  1. Add oil to instant pot and set on saute mode. Allow to heat up. 
  2. Add pork, salt and pepper and brown pork pieces for 3 minutes. 
  3. Add jalapeno pepper, poblano pepper, bell pepper, tomatillos, onion, garlic, oregano, bay leaves, cumin, and chicken stock. 
  4. Stir, cover and cook on high for 55 minutes. 
  5. Release the pressure naturally for 10 minutes and then release remaining pressure. 
  6. Transfer meet to a cutting board.
  7. Puree the mix from the pot with a hand blender. 
  8. Shred meat with a fork and mix with the puree. 
  9. Add meat to flour tortillas along with red onion and cheese. Enjoy!

Cheese and Potato Soup

Nothing tastes better on a chilly Sunday afternoon then some warm, filling soup! This creamy cheese and potato soup is sure to be a hit with the whole family. 

Ingredients

  • 6 cups potatoes, cubed
  • 1 cup cheddar cheese, shredded
  • 6 bacon slices, cooked and crumbled
  • 1 cup corn
  • 2 tablespoons butter
  • 3 ounces cream cheese, cubed
  • 2 cups half and half 
  • 1/2 cup yellow onion, chopped
  • 28 ounces canned chicken stock
  • salt and black pepper to taste
  • 2 tablespoons parsley, dried
  • 1/8 red pepper flakes
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Directions

  1. Set your instant pot on saute mode and add butter. Let butter fully melt. 
  2. Add onion, stir and cook for 5 minutes
  3. Add half of the chicken stock, salt, pepper, pepper flakes and parsley and stir. 
  4. Put potatoes into steamer basket. Seal the instant pot lid and cook on high for 4 minutes. 
  5. Release pressure naturally for 15 minutes, then release the remaining pressure. 
  6. Open the lid and transfer potatoes to a bowl. 
  7. In another bowl, mix water and cornstarch and stir well. 
  8. Set the instant pot to simmer mode, add cornstarch, cream cheese and shredded cheese and stir well.
  9. Add the rest of the stock, bacon, corn, potatoes, and half and half. 
  10. Stir, bring to a simmer. Enjoy!

Instant Pot Spicy Salsa

It’s not a super bowl party without some yummy chips and dip! Try your hand at this homemade salsa recipe. 

Ingredients

  • 2 avocados – pitted, peeled and chopped
  • 1 red onion, chopped
  • 2 tablespoons lime juice
  • 3 jalapeno peppers, chopped
  • 2 tablespoons cumin powder
  • 1/2 tomato, chopped
  • salt and pepper to taste

Directions

  1. In your instant pot, combine onion with avocados, salt, peppers, lime juice, cumin and tomatoes. 
  2. Stir well and cook on low for 3 minutes. 
  3. Serve with your favorite tortilla chips.
