Healthy Energy Bars
This recipe is my all time favorite go to for energy bars and breakfast. I actually prefer making them into balls (it’s just easier). The recipe calls for any type of nut butter and I’ve even used more than one kind in a batch. I also like to add a cup or so of the crispy rice cereal to the mix. I like the texture it gives. At our house we store these in the fridge and they are munched on as a quick, easy and healthy breakfast and as a snack throughout the day.
Easy Crustless Quiche
Ahhhh, a quiche without a crust. Tastes just as delicious just simplifies the process. This quiche is so versatile when it comes to the filling inside. You could go with bacon or ham and then grab some veggies like mushrooms or spinach. I’m always looking for ways to get veggies into breakfast and this quiche does the trick. It does have a 35min. bake time (not as quick as a piece of toast) but well worth the extra few minutes.
Quick Avocado Toast
When I’m looking for a healthier option at a restraunt I bypass the french toast and head for the avocado toast. It can be as simple as making a piece of toast and spreading some avocado on it or you can go a little crazy. Crazy might mean adding a fried or scrambled egg on top or mixing cilantro and lime in with your avocado. Don’t forget a little sprinkling of red pepper flakes on top and maybe some olive oil drizzled over the top.
Healthy Banana-Berry Smoothie
Fruit, ice, honey and ginger. That makes for a yummy smoothie and a healthy breakfast option for you. There is a HUGE variety of smoothies to make that are healthy, easy, and quick. So grab some frozen or fresh fruit. Toss in some spinach if you are looking to get your veggies in at breakfast. Put in a splash of juice or some yogurt or protein powder. That’s the beauty of the smoothie there is no right or wrong way to do it. So get blending!
I do love eating bread. Seriously, any bread but especially banana bread. For the most part banana bread baking is never a quick process. What makes this a quick and easy breakfast is that you can make it ahead of time and freeze it. Then when you are ready just pull it out the night before and let it thaw so it’ll be ready for breakfast. I fool myself into thinking banana bread is healthy because it has bananas in it.
